A new analysis by GFI APAC and NECTAR examines the sensory performance of blended proteins in the Asia-Pacific region.
The results show that blended proteins could appeal to consumers uninterested in fully plant-based meat alternatives, with 22% of consumers willing to buy blended products, compared to 16% for plant-based meat.
A blended chicken mince product was rated higher than its fully animal-based counterpart in taste tests, and several blended products were within 0.5 points of their conventional animal-based equivalents on a seven-point liking scale.
Blended products have the potential to outperform 100% animal meat with further R&D.
